Halloween Candied Apples





What's Halloween without candied apples?
Blood red, a touch of spice and the tart taste of the Autumn harvest.


Here's what you need:
2      cups granulated sugar
2      cups corn syrup
1/3   cup cinnamon candy
1      cup water
3/4   teaspoon ground cinnamon
1/2   teaspoon  vanilla
1/4   teaspoon ground cloves
3/4   teaspoon red food coloring
6      medium size apples

Remove stems from apples, wash, and wipe them dry.
Stick a wooden skewer in each apple, running it through the
apple almost to the end of the base without stick out the other end.
Combine sugar, corn syrup, cinnamon candies, and water in a saucepan.
Cook until it all  dissolves, stirring constantly.
Don't let it come to a boil.
Add the cinnamon, vanilla, ground cloves, and food coloring.
Mix thoroughly.
Using a candy thermometer, boil the mixture to 300 degrees  without stirring.
While mixture is boiling, generously spray a baking sheet with a non-stick spray, just to get ready.
When the mixture reaches 300 degrees, remove it from heat and quickly dip each apple, one at a time, into the mixture until it is thoroughly coated. Set the coated apples on their bottoms with the skewer pointing up, on baking sheet until mixture hardens.
Let apples reach room temperature.
