Mississippi and the record-breaking 700lb alligator

Yes, this big gator officially becomes the new record for weight of a male alligator ever caught,  measured 13 feet, 1.5 inches long.

It was an hour-and-a-half battle of tug of war before the gator was finally and actually caught.

But the real question, how to cook and eat gator?

Fried Alligator

Ingredients
1/2 pound alligator meat, cut into 1/2-inch cubes
Fish batter, for coating (we use Golden Dip fish batter)
If you prefer, you can also dip the meat in an egg wash, then flour it.
Cooking oil, for frying
Salt and freshly ground black pepper

There are a variety of dipping sauces such as remoulade, mustard, or cocktail you can serve with the gator.

Directions
Fill a deep pot halfway full with oil. ( we use peanut oil)
Heat to 360 degrees F.
Coat the alligator meat with the fish batter. Fry for 2 to 3 minutes, until gator floats in oil.
Remove from the oil and add salt and pepper to taste.

You can serve it with beans and rice or just rice.
